Breakfast for Vegetarians
Easy to Make Healthy Start to the Day
Breaking the fast, that's how the first meal of the day gets its name. Just as for meat eaters
or any other style of eating breakfast for vegetarians is an important part of the daily cycle.....or is it?
In days gone by we lived a very different lifestyle to what we do today. Back then it was an
extremely active time with the majority of people working long hours at physically exerting jobs. Even the stay at
home wives had a rather strenous time with washing clothes, cleaning the house, tending to gardens and preparation
of meals (of course, we are not discussing the idle rich who could afford servants).
In this day and age we live a much more sedenary life and even though we a "busy" we are
generally not as physically active. We use cars, we have supermarkets providing our foods, we have machines to do a
lot of the manual work for us and our time-saving devices such as microwaves, dishwashers and automatic washing
machines and dryers are a long way from the coal range and the copper our ancestors used.
This now brings up the issue as to how important is that first meal of the day. Do we really
need it and, if so, how healthy are we eating.
Breakfast for vegetarians is, perhaps, a little more healthy as
it won't contain flesh foods. Bacon, ham, sausages and other types of meat are not on the menu, however, other
rich foods such as waffles and pancakes are probably not so good for you either if they are made with
white flours, butter and what the topping is that you put on them.
So both meat eaters and vegetarians or vegan must ask themselves the question:
Does the physical activity of my day really require a substantial breakfast?
Latest studies have shown that we do over-eat at this time of the day. It is an old wives tale
that a big breakfast will mean that you won't be hungry later in the day. In reverse it has been shown that those
who have a big breakfast will, in fact, have a big lunch and those who have a small breakfast or even skip it
altogether will not require or want any of the other meals to be large either.
Let's now look at some easy breakfast ideas for vegetarians:
1. Healthy Breakfast Smoothies: This would have to
be the quickest and easiest thing to make. If you are adding oats to it you will find that it makes a brilliant
Into a food processor or blender place about 3 cups of chopped fruit (bananas, strawberries, or whatever fruit is
in season), 2 Tblsp of oatmeal and about 2 1/2 cups of natural live yoghurt, combine until creamy, pour into
glasses and serve. To gain maximum benefit prepare the fruit just before using.
Is the Orange Shake Combine all the following
ingredients in a blender or food processor until smooth.
1 pkg. soft tofu
1 cup frozen orange juice concentrate
1 ripe banana
1 1/2 cups water
You can either choose commercially
made muesli or make it yourself. The beauty of making your own is that you do have control over what goes into
it and get it to the flavor you enjoy.
3. Cooked Breakfast:
There are days when you will want to have a slightly more substantial start to the day especially if your day
will be involving a lot more activity than usual.
The simplest of all breakfasts - the Smoothie
