brussles sprouts


100 gm Brussels sprouts
25 gm Cream cheese (use vegan cream cheese)
1/2 a small clove garlic, crushed
1 small tsp Horseradish (or vegan horseradish)
Salt & Pepper to taste.


1.  Trim sprouts and steam until soft. Remove from heat and allow to cool.

2.  In a food processor, blend brussels sprouts with garlic.  Add remaining ingredients and blend again until smooth.

3.  Place in fridge for 30 to 40 minutes before serving.

4.  Shape into three teaspoon size ovals per person.  Place individually onto a little colored leafy salad which has been laid on three toasted triangles.  Top with a small amount of grated radish or a sprinkle of paprika.
