Let's start with the really easy vegetarian cooked breakfast:

Scrambled TofuEasy Vegetarian Cooked Breakfast

1 pkt firm tofu - drained and patted dry
1 onion - chopped and diced
1 tsp vegetable powder
choice of fresh herbs - chopped
salt to taste.

Put a little cooking oil in a heavy based pan and heat.
Add the onion and saute until soft
Add the tofu crumbling up as you put it in.
Add the vegetable powder.

Stir as you are cooking to prevent sticking or burning. Just towards the end of the cooking add the herbs and salt. Serve on its own or with toast

Note: With the basic recipe of the tofu, oil and vegetable powder you can add anything such as mushrooms, red peppers, garlic, curry....whatever your taste is.



Griddled Tomatoes on Soda Bread.

Olive oil for brushing and drizzling
6 tomatoes - thickly sliced
4 slices soda bread - thickly sliced
Balsamic vinegar
Salt & black ground pepper
Grated Cheese - optional.

Brush a griddle pan with olive oil and heat.
Add the tomato slices and cook for about 4 minutes turning once - tomatos should be softened and slightly blackened.
Lightly toast the soda bread
Place tomatos on top of the toast
Drizzle each portion with a little olive oil and vinegar
Season to taste and sprinkle with the grated cheese
Serve immediately.
