Roast Cinnamon Pumpkin
& Feta Salad

Ingredients: recipe book

Peeled & cubed pumpkin
3 Tblsp Olive oil
1 tsp cinnamon
1 tsp crushed garlic
Salt & black pepper to taste

In a roasting pan drizzle the pumpkin with the olive oil. Sprinkle with garlic, cinnamon, salt & pepper.

Bake at 200°C or 400°F for 20-25 minutes.

While that is roasting prepare the feta salad:


250gm feta cheese cubed
1 red onion chopped
1/2 cup basil leaves
1/2 cup toasted pumpkin seeds
4 roasted red peppers sliced.

Put all the ingredients into a salad bowl. When the pumpkin is cooked toss through the salad and serve with your choice of bread.
