This is made from Cashew nuts, if you don't like using nuts then try the tofu based Vegan Mayo.

Ingredients:Vegan Mayo Soy Free

1 cup soaked, drained and rinsed cashew nuts (soak at least 4 hours).
½ cup filtered water
2 Tablespoons lemon juice - please use real lemons.
2 teaspoons apple cider vinegar.
1½ teaspoons mustard powder.
1 clove of peeled garlic.
½ teaspoon coconut sugar (or use raw sugar or other sweetener you prefer).
1 teaspoon sea salt.
1¼ cups olive oil.

Method: 

Put everything EXCEPT the oil into a blender and blend on high speed until smooth.
Turn speed down to lowest.
Start to very slowly pour in the oil while the blender is on low speed.
At the end, finish off by increasing the speed.
Put into jar and refrigerate.

 

Notes: 

  • This will last up to 10 days in the fridge.
  • It will thicken when in the fridge, but soften down when brought to room temperature.
