This is made from Cashew nuts, if you don't like using nuts then try
the tofu based Vegan Mayo.
1 cup soaked, drained and rinsed cashew nuts (soak at least 4
½ cup filtered
2 Tablespoons lemon juice - please use
2 teaspoons apple cider
1½ teaspoons mustard
1 clove of peeled
½ teaspoon coconut sugar (or use raw
sugar or other sweetener you prefer).

1¼ cups olive
Put everything EXCEPT the oil into a blender and blend on high speed until
Turn speed down to lowest.
Start to very slowly pour in the oil while the blender is on low speed.
At the end, finish off by increasing the speed.
Put into jar and refrigerate.
- This will last up to 10 days in the fridge.
- It will thicken when in the fridge, but soften down when brought to room temperature.
