This is a beautiful Mayo that lasts a couple of weeks in the refrigerator, however, scroll down for the really super easy Quick Vegan Mayo

This Mayo uses tofu.  If you don't like to use soy then try the soy free mayo.

Ingredients:Vegan Mayonaise

1/2 pound tofu
1 cup water
1 cup olive oil
1/4 cup white wine vinegar
1/4 cup tamari
1/4 cup tahini
2 tsp onion powder
1/2 tsp garlic powder
1 Tblsp parsley
1 1/2 tsp basil
1 tsp veggie salt
1/4 tsp cayenne (optional)

Method: 

All into a food processor and whizz until creamy

Notes: 

Use silken tofu, (firm).

I usually don't put in all the water at the beginning and see what it needs at the end of the processing - sometimes it needs more than the cup, I just see what it's like.

It does thicken when kept in the fridge, but I'll just take out what I want and add a bit more water if it needs it.

I don't put in as much cayenne.

Quick Vegan Mayo

2/3 cup soy milk
Juice of 1 fresh lemon
Salt and garlic to taste.

Put all into a blender and start blending, then while machine is still going, slowly pour in 1 1/2 cups of canola oil.

Store in refridgerator.
